Lately I've been pretty engrossed in planning details and the menu for dinner after our beach wedding ceremony on Coronado Island in August as well as for the Portland reception (rockin' party is more like it) in September. I've been taking care to make sure the non-alcohol drinkers aren't left drinking watered down ice tea, while at the same time making as many drink options for everybody. This strawberry basil lemonade recipe is fantastic with our without the spirits. I want to make myself a glass of this concoction, kick my shoes off and spend the day in the grass watching clouds float by.

Strawberry Basil Lemonade:


10 lemons, juiced, approx 1 cup of lemon juice

3/4 cup super fine sugar

4 cups water

8-10 strawberries, hulled

1/3 cup fresh basil

1/2 cup vodka (optional)

Directions:

Prep time: 10 min
Total time: 15 min

Juice the lemons and transfer the juice into a large pitcher. Add the sugar and the water and stir to combine and dissolve the sugar. Add the strawberries and basil. Using an immersion blender, blend the mixture for about 20 seconds just until the mixture turns pink and the basil is finely chopped. Add chilled vodka if desired.
